Winemaking Hieronymus is the pinnacle red blend from Elephant Hill, made only in exceptional vintages. The 2019 is a Cabernet Sauvignon-led blend with Merlot and Cabernet Franc, hand-picked from the Gimblett and Te Awanga vineyards. Wild-fermented in small batches and aged for 24 months in French oak, it is a wine of depth, power, and elegance, released with additional bottle age for optimal drinking.
Bouquet Aromatic and refined, with blackcurrant, graphite, and dark plum. Hints of violet, cigar box, bay leaf, and vanilla add richness and lift.
Palate Full-bodied with great concentration and tension. A core of dark fruit is supported by fine tannins, fresh acidity, and savoury complexity. Notes of cassis, tobacco, baking spice, and flint flow into a long, mineral finish with superb polish and balance.
