The 2019 vintage is hand-picked from old vines in a single, organically farmed parcel. It undergoes wild fermentation in old French oak barrels, then ages on full lees for 18 months—without any fining or filtration. This approach results in a richly textural, complex wine with savoury depth and far more restraint than the region's typical style.
