First made in 1982, Noble One is one of Australia’s most awarded dessert wines, produced from botrytised Semillon grown in the Riverina region of New South Wales. The 2019 vintage saw perfect conditions for noble rot, allowing the grapes to concentrate beautifully on the vine. Fermented and matured in French oak barriques for 12 months, the wine combines luscious sweetness with fine acidity and complex oak influence.
Bouquet Intensely aromatic with notes of dried apricot, marmalade, honeycomb and vanilla. Hints of candied citrus peel, toasted nuts and crème brûlée add luxurious depth.
Palate Velvety and full-bodied with a luscious texture. Layers of stone fruit, lemon curd and spice are balanced by vibrant acidity. The finish is long, rich and beautifully clean.
Food Pairing Perfect with blue cheese, tarte tatin, lemon meringue pie or baked figs. Also delicious with foie gras, almond pastries or poured over vanilla ice cream.
Cellaring Drinking beautifully now but will continue to evolve and deepen through 2035 and beyond. Expect added nutty, toasty complexity with age.
Interesting Fact De Bortoli Noble One is widely recognised as Australia’s answer to Sauternes, and has earned more than 180 trophies and 500 gold medals since its first vintage.
