Black Noble is Australia’s only fortified wine made from botrytised Semillon, inspired by the great wines of Sauternes and Tokaji, but with its own distinctly Aussie flair. The fruit is sourced from De Bortoli’s Riverina vineyards and allowed to develop noble rot, which concentrates sugars and flavour. After fermentation, the wine is fortified and aged in old oak casks for over 10 years, creating a uniquely rich, luscious wine with extraordinary complexity and depth.
Bouquet Intense and luxurious, with aromas of toffee, dried fig, raisin, dark honey, and caramelised orange peel. Hints of espresso, toasted walnut, and sweet spice add further depth.
Palate Velvety and full-bodied, with rich layers of sticky date, burnt sugar, and chocolate-coated figs. The sweetness is generous but balanced by rancio complexity and a clean line of acidity. Long, warming, and utterly indulgent.
Food Pairing Perfect with sticky toffee pudding, chocolate fondant, crème brûlée, or blue cheese. Also pairs beautifully with spiced nuts or a late-night square of dark chocolate.
Cellaring Ready to drink now and will remain stable for many years. Once opened, enjoy over several weeks if stored cool and sealed.
Interesting Fact Black Noble is made from the same botrytised Semillon used for De Bortoli’s iconic Noble One, but aged and fortified in a totally different way—resulting in a wine that’s often described as Australia’s answer to a Tawny Tokaji.
