Dandelion Lionheart of the Barossa Shiraz 2021

Winemaking
Named after Carl Lindner, the “lionheart” of Dandelion Vineyards, this Shiraz is sourced from 100+ year-old vines in the Barossa. Hand-picked and open fermented with wild yeasts, then matured in French oak for 18 months, the 2021 vintage delivers power, purity, and plush texture in true Barossa fashion.

Bouquet
Aromas of ripe blackberry, mulberry, and plum jam, lifted by black pepper, vanilla pod, dark chocolate, and savoury herbs.

Palate
Full-bodied and velvety, with dense dark fruit, fine tannins, and gentle oak spice. Layers of liquorice, cocoa, and sweet earth run through the long, warming finish.

Food Pairing
Perfect with slow-cooked lamb, smoky beef brisket, grilled portobello mushrooms, or rich hard cheeses. A bold red built for flavour-packed dishes.

Cellaring
Delicious now with decanting, and structured to develop beautifully over 8–10 years.
