Winemaking
Crafted in honour of Tom McDonald, a pioneer of fine New Zealand reds, this Cabernet Sauvignon comes from premium Hawke’s Bay vineyards and is made in a traditional, structured style. Fermentation in open-top fermenters and extended oak maturation create a wine built for complexity and longevity.

Bouquet
Fragrant and brooding with aromas of blackcurrant, plum, and mulberry. Layers of cedar, graphite, cigar box, and mocha lend depth and savoury richness.

Palate
Full-bodied with firm tannins and a gravelly backbone. Ripe black fruits, liquorice, and spice unfold into a long, dry finish. A wine with real presence and ageing potential.

Food Pairing
Excellent with chargrilled steak, roast lamb, mushroom pie, or strong hard cheeses. A wine for rich, flavourful dishes and cool nights.
