From the sister house of Bollinger, Ayala Rosé Majeur is crafted with finesse and freshness in mind. The blend is predominantly Chardonnay (approx. 50%), with Pinot Noir and Meunier making up the balance—plus around 6% still red Pinot Noir added for colour and structure. Aged for around 3 years on lees and bottled with a low dosage (7 g/L), the result is a precise, dry rosé that champions elegance over richness.
Bouquet
Delicate aromas of rosehip, wild strawberry, and citrus peel mingle with red apple, white flowers, and a touch of minerality. It’s light, bright, and quietly complex.
Palate
Fresh and dry with an airy mousse and zippy acidity. Flavours of raspberry, redcurrant, and blood orange are joined by notes of chalk and subtle spice. The structure is taut, and the finish is clean and mineral—a rosé of poise and restraint.
Food Pairing
Ideal with prawns, sushi, grilled vegetables, or goat’s cheese and beetroot salad. A sophisticated choice for aperitif hour or light summer dishes.
Cellaring
Best enjoyed in its vibrant youth, but can cellar for 2–3 years to allow the red fruit and savoury notes to round out and deepen in tone.
