Triana Pedro Ximénez is one of the finest examples of this indulgent, naturally sweet sherry style. Made by Bodegas Hidalgo La Gitana, the Pedro Ximénez grapes are hand-harvested and sun-dried on straw mats until they become rich and raisin-like. After gentle pressing, the wine is aged oxidatively in old oak barrels using the traditional solera system for over ten years, developing extraordinary depth and sweetness.
Bouquet Concentrated and luxurious with aromas of dried fig, date, raisin, and treacle. Undertones of coffee, cocoa, toffee, and sweet spice rise from the glass.
Palate Velvety and full-bodied, with intense flavours of sticky date pudding, molasses, chocolate-coated raisins, and caramel. There’s a lingering sweetness balanced by a gentle freshness and warming finish. Incredibly indulgent and persistent.
Food Pairing A perfect after-dinner pour. Pair with blue cheese, flourless chocolate cake, Christmas pudding, or pour over vanilla ice cream. Also excellent with spiced nuts or enjoyed on its own.
Cellaring Fully mature and stable in bottle. Once opened, it can be enjoyed over several months if kept sealed and stored in a cool, dark place. Serve slightly chilled.
