Napoleon Amontillado is a classic dry sherry from Bodegas Hidalgo La Gitana, located in the heart of Sanlúcar de Barrameda. It starts life as a Manzanilla, ageing biologically under flor for several years before the flor naturally fades and oxidative ageing begins. The result is a wine that bridges freshness and richness, aged for over 12 years in a solera system in seasoned American oak. This style showcases the transition from vibrant youth to layered maturity.
Bouquet Lifted and savoury with aromas of toasted almond, dried herbs, orange peel, and saline sea spray. Subtle hints of chamomile, hazelnut, and aged wood rise with time in the glass.
Palate Bone-dry and layered with refined complexity. Flavours of roasted nuts, dried citrus, and a touch of spice are carried by bright acidity. The texture is silky and elegant, leading to a long, dry finish with lingering savoury warmth.
Food Pairing Pair with Jamón Ibérico, aged cheeses, roasted cauliflower, or smoked fish. Also excellent with consommé, mushroom dishes, or rich vegetarian tapas.
Cellaring Fully aged and stable in bottle. Once opened, enjoy within 4–6 weeks when sealed and stored in a cool, dark place. No decanting required.
