Crafted from select Hawke’s Bay vineyards, the 2023 Chardonnay from Bilancia reflects precise viticulture and gentle winemaking. Hand-harvested fruit was whole-bunch pressed and fermented in French oak barrels, with regular lees stirring to build complexity. The use of indigenous yeasts and partial malolactic fermentation enhances texture while preserving purity of fruit.
Bouquet Bright aromas of Meyer lemon, white peach and almond are layered with hints of nougat, struck match and wet stone, offering both freshness and intrigue.
Palate Silky and vibrant, the palate opens with citrus and nectarine, unfolding into notes of cashew, brioche and a fine saline thread. The oak is well-integrated, adding structure without overwhelming the fruit. The finish is long, clean and elegant.
Food Pairing Superb with roast chicken, crayfish tails or creamy mushroom risotto. This Chardonnay will sing alongside richly flavoured but balanced dishes.
