Winemaking The Irongate label represents Babich’s flagship expressions from the stony soils of the Gimblett Gravels. The 2019 vintage is a classic Bordeaux-style blend of Cabernet Sauvignon, Merlot, and Cabernet Franc, aged in French oak barriques for over a year. Meticulous vineyard management and traditional winemaking result in a wine of balance, structure, and elegance.
Bouquet Fragrant and composed with notes of blackcurrant, plum, and blackberry. Underlying aromas of cedar, dried herbs, pencil shavings, and mocha bring complexity and charm.
Palate Medium to full-bodied with fine tannins and a seamless integration of oak and fruit. Rich black fruit flavours are joined by hints of spice, tobacco, and earthy minerality. The finish is dry, savoury, and persistent, with a classic Gimblett Gravels backbone.
Food Pairing Ideal with herb-crusted lamb, roast beef, mushroom risotto, or hard aged cheeses. Also pairs well with lentil-based dishes or slow-cooked meats.
