Aviation American Gin is a New Western-style gin crafted in Portland, Oregon, with a focus on balance and smoothness. Unlike traditional London Dry styles that are dominated by juniper, Aviation features a carefully calibrated blend of seven botanicals: juniper, cardamom, lavender, Indian sarsaparilla, coriander, anise seed and dried orange peel. The result is a softer, more rounded gin that’s become a modern classic, especially popular in cocktails.
Bouquet Clean and expressive, with notes of orange peel, floral lavender, cardamom and gentle spice. Juniper is present but not overpowering, giving way to a subtle sweetness and earthy depth.
Palate Smooth, spicy and citrus-forward. A bright, silky texture carries flavours of soft juniper, sweet orange, coriander and a whisper of floral herb. Light spice builds on the finish, which is clean, balanced and pleasantly dry.
Food Pairing Ideal in a G&T with orange peel or rosemary. Also perfect in a Negroni, Aviation cocktail, or Gin Sour. Pairs well with grilled seafood, goat’s cheese, citrus-glazed chicken or light tapas.
Cellaring Best enjoyed fresh to preserve its bright botanical profile. Store upright in a cool, dark place. Once opened, it will hold its character for years if properly sealed.
Interesting Fact Aviation Gin gained international fame when actor Ryan Reynolds became co-owner, but its cult status among bartenders was already well-established—thanks to its versatility and refined, modern flavour.
