The Aviator is Alpha Domus’ flagship Bordeaux-style blend, crafted from Cabernet Sauvignon, Merlot, Cabernet Franc, and Malbec grown in the Bridge Pa Triangle. Hand-harvested and aged in French oak barriques for 18 months, the 2019 vintage shows poise, complexity, and superb ageing potential.
Bouquet Fragrant and layered with aromas of blackcurrant, blackberry, and plum. Notes of cedar, cigar box, dried herbs, and graphite build aromatic complexity.
Palate Full-bodied and finely structured, with dark berry fruit, savoury spice, and tightly knit tannins. A mineral core and fresh acidity bring tension and drive. The finish is long and dry with elegant oak integration and a touch of mocha.
Food Pairing Ideal with roast beef, venison, lamb shanks, or mushroom Wellington. A superb match for aged cheddar and truffle-infused dishes.
Cellaring Built to age for 10–15 years. Decant when young to allow the structure and aromatics to unfold.
Interesting Fact Named in honour of the family’s aviation heritage, The Aviator is a wine of lift, balance, and precision—just like the aircraft it references. It stands as one of Hawke’s Bay’s most polished and cellarable red blends.
