Pegasus Bay Sauvignon Blanc 2021, hailing from the Waipara Valley of North Canterbury, basks in the unique mesoclimate afforded by the protective embrace of the Teviotdale Range, sheltering the vineyard from the Pacific’s easterly breezes. With vines over 35 years old, some rooted in their own legacy, this wine embodies the essence of its terroir. Harvested in separate batches during April to capture a spectrum of ripe yet zesty aromas, it undergoes a meticulous winemaking process, including fermentation in stainless steel tanks to preserve varietal purity and maturation on skins for added complexity. A touch of barrel-aged Semillon enriches the blend, enhancing its texture. Upon release, it presents a subtle lemon hue and a vibrant bouquet, tantalising with tropical and citrus notes. Passionfruit and pineapple dance with grapefruit, green apple, and lemon peel, while a hint of gunflint adds intrigue. Its textured yet precise mouthfeel, coupled with a whip of acidity and simmering phenolics, delivers heightened structure and length.
