Winemaking Crafted using the traditional method, this Blanc de Blancs is made entirely from Chardonnay grown in Hawke’s Bay. After secondary fermentation in bottle, it is aged on lees for added complexity and depth. The result is a sparkling wine with finesse, freshness, and classic structure.
Bouquet Delicate aromas of lemon peel, green apple, and white flowers lead into notes of almond, fresh brioche, and a hint of oyster shell.
Palate Elegant and finely beaded with crisp citrus fruit, creamy mousse, and a chalky mineral finish. Layers of toast, nougat, and lemon curd bring complexity without heaviness.
Food Pairing An excellent match for oysters, goat cheese, fresh seafood, or light canapés. Also a brilliant start to any celebration or long lunch.
Cellaring Beautifully fresh now but can be cellared for 3–5 years to develop additional richness and toastiness.
